How should I store my bread?
Store sourdough at room temperature wrapped in a cloth or paper bag for up to 3 days. Avoid plastic bags — they trap moisture and soften the crust.
What makes sourdough different from regular bread?
Sourdough is naturally leavened using a live fermented starter instead of commercial yeast. The slow fermentation process develops complex flavor, improves digestibility, and means no preservatives are needed — just flour, water, salt, and time.
What will I learn in the class?
You'll go through every step of making Coyote Sourdough by hand — mixing, stretching, folding, shaping, scoring, and
baking. The class is beginner-friendly and runs approximately 2.5–3 hours.

How far in advance do I need to order?Orders close Thursday. Same-day Friday orders are not accepted as everything is baked fresh to order.

Do you deliver?
Yes, local delivery is available in the Newbury Park and surrounding area. Delivery details and fees are provided atcheckout.
How do I refresh a loaf?
Run the crust briefly under water, then bake at 350°F for 10–12 minutes. It comes back to life like it just came out of the oven.
Is sourdough gluten-free?
No. Sourdough contains wheat and is not gluten-free. Billy Bread does offer seasonal gluten-free products — sign up for the email list to be notified.
What do I take home?
Every student leaves with a live sourdough starter, banneton, bench scraper, printed recipe and maintenance guide, one baked Coyote Sourdough scored during class, one dough to take home and bake the next day, and one fully fermented loaf ready to bake in the morning.
Is the class right for me if I've never baked bread before?
Absolutely. The class is designed specifically for beginners. No experience required.
Do you take recurring or standing orders?Not currently, but signing up for the email or SMS list is the best way to get notified each week when the menu drops.

Yes. Slice before freezing for easy toasting. Sourdough freezes beautifully for up to 3 months.
